Turkey Chili

Ingredients:
1 tablespoon vegetable oil
1 onion, finely chopped
3 garlic cloves, minced
1 green bell pepper, cut in 1/2 inch squares
1 red bell pepper, cut in 1/2 inch squares
2 teaspoons chili powder
3/4 teaspoon oregano
3/4 teaspoon ground cumin
3/4 teaspoon ground coriander
1 lb ground turkey
1 (14 ounce) can chopped tomatoes
1 (8 ounce) can tomato sauce
2 tablespoons tomato paste
1/2 teaspoon salt
1/4 teaspoon black pepper
1 (15 ounce) can red kidney beans, drained and rinsed
Directions:
1. In a flameproof casserole, heat the oil over moderate heat. Add the onion and garlic and sauté for 5 minutes or until the onion is soft. Add the bell peppers and sauté for 5 minutes or until soft.
2. Stir in the chili powder, oregano, cumin, and coriander and cook for 1 minute.
3. Add the ground turkey and sauté for 3 minutes or until no longer pink.
4. Add the tomatoes, salt and black pepper and bring to a simmer.
5. Add the beans and cook for 3 minutes or until heated through.
