This recipe is excellent on a cool fall or winter day. I've modified it over the years and often experiment with the seasonings.
Ingredients:
2 1/2 lbs lean ground turkey
1 large sweet onion, chopped
28 ounces crushed tomatoes
42 ounces diced tomatoes
15 1/2 ounces dark red kidney beans
15 1/2 ounces red kidney beans
15 1/2 ounces black beans
2 green peppers, diced
1 carrot, diced
8 ounces fresh mushrooms, sliced
1 tablespoon chili powder
1 tablespoon cumin
3 tablespoons sweet mesquite powder
Directions:
1. Brown ground turkey in a skillet.
2. Saute peppers, onion, carrots and mushrooms until soft. Add tomatoes, beans and seasoning and heat.
3. Add turkey to vegetables and simmer for a minimum of 30 minutes .
