Turkey and Gorgonzola Salad

Ingredients:
8 ounces deli-style turkey, cubed
1 gala apple, cored and thinly sliced
1/2 cup chopped red onion
1 (5-ounce) package spring greens salad mix
1/4 cup pecans, toasted
1/3 cup (1.3 ounces) crumbled gorgonzola cheese
1/4 teaspoon freshly ground black pepper
1/2 cup frozen apple juice concentrate, thawed
1/4 cup balsamic vinegar
1 1/2 teaspoons dark sesame oil
Directions:
1. Combine first 3 ingredients in a medium bowl; toss well.
2. Place 1 1/2 cups spring greens on each of 4 plates. Top evenly with turkey mixture; sprinkle with pecans, cheese, and pepper.
3. Combine apple juice concentrate, vinegar, and oil; stir well with a whisk. Spoon about 3 tablespoons dressing over each serving.
