Refried beans help make a thick, hearty filling that's easy for toddlers to eat because it stays put. Serve the burritos for adults on a bed of lettuce topped with salsa and light sour cream.
Ingredients:
cooking spray
8 ounces ground turkey
1 1/2 tablespoons 40% less-sodium taco seasoning
1/4 cup water
1 (16-ounce) can organic refried beans
1/3 cup salsa
6 (8-inch) whole-wheat flour tortillas
1 cup (4 ounces) preshredded reduced-fat mexican blend cheese
Directions:
1. Heat a large nonstick skillet over medium heat; coat pan with cooking spray. Add turkey to pan; cook 7 minutes or until turkey is done, stirring frequently.
2. Add taco seasoning and 1/4 cup water to pan, stirring well. Add beans and salsa, stirring gently to combine. Reduce heat to low, and cook 3 minutes or until thoroughly heated.
3. Warm flour tortillas according to package directions. Sprinkle 2 tablespoons cheese down center of each tortilla; top each with about 1/3 cup turkey mixture. Roll up tortillas.
4. let your toddler help by: Sprinkling the cheese on the tortillas. Rolling up the tortillas.
