Ingredients:
1 1/2 teaspoons extra-virgin olive oil
1 tablespoon balsamic vinegar
1 teaspoon dijon mustard
1/8 teaspoon salt
1/8 teaspoon pepper
2 cups arugula
3 slices deli turkey
2 tablespoons dried cranberries
1 tablespoon chopped pistachios
1 4-inch whole-wheat pita
Directions:
1. Whisk olive oil, balsamic vinegar, Dijon mustard, salt and pepper; toss with arugula. Divide salad atop turkey slices. Sprinkle each with dried cranberries and chopped pistachios. Roll up turkey; stuff into pita.
