Tupelo Honey Pecan Pie

Ingredients:
1/2 cup butter or margarine, softened
1 cup sugar
3 eggs
1/4 cup plus 2 tablespoons honey
3 tablespoons light corn syrup
1/4 teaspoon salt
pinch of baking soda
1 cup chopped pecans
1 unbaked (9-inch) pastry shell
Directions:
1. Cream butter; gradually add sugar, beating well. Add eggs, one at a time, beating well after each addition.
2. Add honey, syrup, salt, and soda; beat well. Stir in pecans. Pour mixture into pastry shell. Bake at 375° for 30 minutes or until set.
3. Note: If available, túpelo honey, which comes only from the túpelo tree in Florida, can be used in place of commercial honey.
