This recipe came from Top Secret Recipes. Their version calls for corn flake crumbs, but you can substitute panko crumbs. Makes a really good crunchy chicken strip with two choices of yummy sauce. Can be served as an appetizer or a main course.
Ingredients:
1/4 cup mayonnaise
1 1/2 teaspoons mustard
2 teaspoons honey
1 dash paprika
2 tablespoons dijon mustard
1 tablespoon apricot jam
2 tablespoons honey
1 cup corn flakes, crushed
2 teaspoons red pepper flakes
1 1/4 teaspoons cayenne
1 teaspoon cumin
1 teaspoon salt
1/2 teaspoon paprika
1/4 teaspoon onion flakes
1/4 teaspoon garlic powder
1 egg
1 cup milk
1 cup flour
1 -2 lb chicken strips
Directions:
1. Mix first four ingredients for honey mustard dipping sauce.
2. Mix next three ingredients for apricot dipping sauce.
3. Mix next six ingredients in a shallow bowl.
4. Heat 2-3 cups oil to 350 degrees.
5. Mix egg and milk in another shallow bowl, beat well with a fork.
6. Place flour in a third shallow bowl.
7. Dip chicken in flour, then milk, then back to flour, then back to milk then into crumb mixture. Coat well.
8. Fry in hot oil.
