Ingredients:
2 granny smith apples
2 cucumbers
2 tomatoes
1 bell pepper
1/2 purple onion
2 lemons, juice of
1/8 cup tarragon vinegar
1/4 cup olive oil, scant
1 teaspoon salt
1 -2 tablespoon mint, finely ground
Directions:
1. Peel and chop apples and vegetables very fine.
2. Mix dressing and pour over salad.
3. Let stand at least 2 hours before serving.
