Tuna with Penne, Lemon, and Parsley

Tuna can be purchased in convenient 3- and 5- ounce, easy-to-open pouches as well as cans. Albacore tuna is more expensive, but we prefer its milder flavor. Any variety is fine as long as it's packed in water rather than oil.
Ingredients:
3 cups cooked penne (about 8 ounces uncooked tube-shaped pasta)
1 (12-ounce) can albacore tuna in water, drained and flaked
1/2 cup red onion, thinly sliced
1/4 cup (1 ounce) grated fresh parmesan cheese
1/4 cup chopped fresh parsley
2 teaspoons grated lemon rind
3 tablespoons fresh lemon juice
2 tablespoons pine nuts, toasted
2 tablespoons olive oil
1/4 teaspoon salt
1/4 teaspoon freshly ground black pepper
1 garlic clove, minced
Directions:
1. Combine all ingredients in a large bowl; toss gently. Serve at room temperature.
