Tuna-Veggie Stuffed Pita

Ingredients:
1 (6-ounce) can albacore tuna in water, drained
2 tablespoons chopped onion
1 celery rib, chopped
1/4 red or green bell pepper, chopped
1/2 cup shredded carrot
3 tablespoons light mayonnaise
2 teaspoons lemon juice
1/2 teaspoon grated lemon rind
1/4 teaspoon salt
1/4 teaspoon pepper
4 (6 1/2-inch) whole wheat pita rounds
lettuce leaves
toppings: shredded carrot, tomato slices (optional)
Directions:
1. Stir together first 10 ingredients.
2. Cut a pocket into each pita round. Line with lettuce. Spoon 1/2 cup tuna mixture into pitas. Top with carrot and tomato slices, if desired.
