A Coooooooooooool dish for summers when one hates to sweat for hours in the kitchen........Wins rave reviews for me every time I serve this.
Ingredients:
1 can drained garbanzo beans
1 bunch green onion, diced
2 stalks celery, chopped
1 tablespoon sweet pickle relish
1/4 cup chopped olive (optional)
mayonnaise
Directions:
1. Mash garbanzo beans.
2. Add all other ingredients.
3. Mix well.
4. The tastes come best when mashed thoroughly with own hands.
5. Else use a masher but do not use a hand blender at all.
6. Serve on bread or toast or as a salad.
