Another cool salad for hot summer days. 8 servings would be as a side dish; as a summer main course only figure on 4 or so, depending upon portion size.
Ingredients:
2 cups diced red apples, unpeeled
2 6 1/2 ounce cans albacore tuna, drained & chunked
1 cup sliced celery
1/2 cup cooked peas
1/2 cup chopped sweet onions
2 cups cooked rice
2/3 cup creamy french dressing
lettuce leaves
cherry tomatoes (optional)
salt, to taste
pepper, to taste
Directions:
1. Combine first 6 ingredients.
2. Season to taste with salt and pepper.
3. Toss salad and dressing lightly.
4. Place washed lettuce leaves on serving plates.
5. Top lettuce with a big scoop of salad and garnish with cherry tomatoes, if desired.
