Tuna On A Shoestring Salad

This goes good on a hot day. No need to heat up the kitchen except to boil the eggs, which you can do earlier. My husband and I really like it. Serve it with a roll and you have a meal, Add a dessert only if you want one.
Ingredients:
1 can drained tuna
1 cup shredded carrots
1 cup sliced celery
1/4 cup minced onion
1 4oz. can shoestring potatoes
optional ingredients are olives, pickles or hard boiled eggs.
i omit the celery since we don't like that.
Directions:
1. Separate tuna into chunks.
2. Place in large bowl.
3. Add carrots, celery, onion and mayonaise.
4. Mix gently.
5. Cover and chill.
6. Just before serving, fold in potatoes.
