This home-made version of mac & cheese uses whole wheat pasta for texture and fiber, and bacon and mushrooms, plus a blend of cheeses, for extra flavor. If you can find whole wheat elbows, use them instead of the rotini.
Ingredients:
1 lb whole wheat rotini
3/4 cup heavy cream
1 lb sharp cheddar cheese
1/3 lb havarti cheese
3 (19g g) bacon
1/2 lb crimini mushrooms
1 can tuna, drained
Directions:
1. Start the pasta cooking
2. In a small saucepan, saute the bacon and mushrooms together.
3. Slice or grate the cheese. If presliced, some slices can be reserved to put on the top.
4. Preheat oven to 375
5. Turn heat to low and add the heavy cream, tuna, and cheese to the bacon/mushroom mixture
6. Simmer, stirring frequently, until the cheese is fully melted and the sauce has an even consistency.
7. Once the pasta is cooked, drain it and put it in an oblong baking dish.
8. Pour the cheese sauce over the pasta and mix in a bit so the pasta is fully coated.
9. If some cheese was reserved as topping, add it now.
10. Bake for 30-45 minutes until golden brown.
11. Cut into 10-12 individual portions. Freezes well.
