Tuna fish salad mix with tuna, eggs, olives, onions and celery, to use as a salad or a sandwich. SALAD: 1/3 cup tuna mixture over 1 cup pre-cut salad mix for about 155 calories. SANDWICH: 1/4 cup tuna mixture on wheat bread for 190 calories.
Ingredients:
3 oz hard boiled egg (2 large), chopped
6 oz tuna fish, in water, well-drained
1 1/2 oz black olives, sliced thin
1 1/4 oz green olives, sliced thin
3/4 oz celery, chopped fine
1 1/2 oz onion, chopped fine
2 1/4 oz sweet relish
3/8 cup miracle whip
1 1/2 tsp mustard
1 tbl chives
1 tbl parsley
1 3/10 g (1/4 tsp) salt substitute
1/4 tsp pepper
Directions:
1. Hard boil 3 large eggs, and chop. Put in medium mixing bowl and mash with a fork. Add well-drained tuna fish, olives, celery, onion, and sweet relish and mix well.
2. In small bowl, combine Miracle Whip, mustard, chives, parsley, salt substitute and pepper and blend well.
3. Pour dressing over tuna mixture and stir until well-blended.
4. Serve as salad, over 1 cup salad mix or as a sandwich on your favorite wheat bread.
