Tuna Curry over Rice

I happened to have all the ingredients on hand. but used canned tomatoes (drained) instead of a fresh one and it came out great. Such a simple and delicious curry dish.
Ingredients:
1 1/2 cups rice
1 dash salt
1 teaspoon turmeric powder
1 tablespoon corn oil
1 small onion, diced
1 medium tomato, diced
2 (5 ounce) cans tuna in water, drained
2 tablespoons flour
1/2 teaspoon salt
2 tablespoons curry powder
1 dash ground pepper
1 teaspoon dried parsley
1 fluid ounce milk
1 cup water
Directions:
1. Boil the rice as usual adding salt and turmeric powder to the water.
2. Fry the diced onion and tomato in cooking oil.
3. Mix in spices and flour.
4. Add water, milk and tuna.
5. Let this simmer for about 15 minutes.
6. Add more flour or water depending on how thick you like the sauce.
7. Serve on top of the rice.
