Tuna, Cottage Cheese, Vegetable, Quinoa Casserole

tuna cottage cheese casserole with whatever vegetables you have available and a starch (quinoa in this case, can substitute pasta, or potatoes, etc)
Ingredients:
1 cup cottage cheese
7 oz albacore tuna
1 medium onion, diced
2 tbsp garlic, minced
2 cups asparagus, cubed
1 cup carrots, cubed
2 tbsp canola oil
1/2 cup shredded cheese
2 cups quinoa
1/2 cup red bell peppers, cubed
1 cup tomatoes, chopped
1 tbsp rosemary
1 tsp salt
1 tsp pepper
1 tsp thyme
1 tbsp oregano
1 tbsp basil
Directions:
1. Preheat oven to 350
2. Sautee garlic in canola oil
3. Add onions and sautee
4. Add diced vegetables and sautee
5. Add spices
6. Add tuna, flaked, and mix well
7. Spray large rectangular casserole dish with pam
8. Layer casserole with cooked quinoa, vegetables, and cottage cheese
9. Add shredded cheese on top
10. Add a little water to prevent drying out
11. Bake at 350 with foil for 30-40 minutes
12. Remove foil and bake until cheese browns
