3 cans of drained chickpea or white kidney beans |
3 can albacore tuna in water (6 oz) drained |
1 large tomato chopped or 20 cherry tomatoes halved |
1 bunch of scallions, chopped |
sundried tomatoes slivered to taste (optional) |
2 tbsp capers drained (optional) |
2 tbsp red wine vinegar |
4 tbsp extra virgin olive oil |
salt & pepper to taste |
parmesan cheese sprinkled on top |
cook pasta (spagetti, elbow, or whatever one you prefer)(an 8 oz to 12 oz box) |
drain and mix in with salad. |
