I found this recipe on the side of a Bisquick box. We liked it very much and it was better than most of the other tuna burgers recipes we have seen over the years. My brother-in-law who hates tuna even liked them! You can either eat them on buns like a burger or you can put them in a casserole after they are browned and bake them for 30 minutes covered with spaghetti sauce. The cook time lised below does not reflect the 30 minute baking time if you decide to make them that way.
Ingredients:
1 cup soft breadcrumbs (about 2 slices cut into tiny cubes with crusts removed)
1/2 cup original bisquick baking mix
1 tablespoon dijon mustard
1/2 teaspoon old bay seasoning (can use more depending on your taste preference)
1/4 teaspoon black pepper
2 eggs, slightly beaten
2 celery ribs, diced
1/4 cup green onion, thinly sliced
1/4 cup onion, diced
2 (7 ounce) cans chunk white albacore tuna in water, drained
2 tablespoons margarine
sandwich bun, split
4 -5 tablespoons dill pickles, dip to use if you eat them like burgers
Directions:
1. In a med. bowl, mix all ingredients except abutter, buns and dill dip.
2. Let sit about 5 minutes.
3. Shape into patties (aabout 2 inches thick, but can make them 3 1/2 inches thick if you prefer thicker burgers but use about 1/2 c or less for each patty).
4. In a 12 inch skillet melt margarine over med. heat.
5. Add patties to skillet when hot and cook 10-12 minutes, turning once until nicely browned on both sides and well cooked through.
6. Serve on a bun with the dill dip, tomatoes, red onions and lettuce Or, you can place them in a casserole dish and cover them with spaghetti cause and bake them for 30 minutes and use them as a side dish for a meal.
