Tuna and White Bean Salad (Volumetrics)

Light, flavorful, slightly tart. Use any white bean you prefer, or any black olives you have on hand. From The Volumetrics Eating Plan.
Ingredients:
3 tablespoons lemon juice
2 tablespoons water
1 tablespoon olive oil
1 teaspoon minced garlic
1 teaspoon dijon mustard
1/2 teaspoon salt
fresh ground black pepper
1 cup canned cannellini beans, drained and rinsed
1/2 cup chopped red onion
1/4 cup pitted chopped nicoise olive
2 cups peeled seeded, and diced tomatoes
3 cups baby spinach
1 (12 ounce) can solid white tuna, drained and flaked
Directions:
1. Whisk the lemon juice through the pepper in a large bowl. Add the rest of the ingredients to the bowl and toss to coat with dressing.
