Ingredients:
salad
1 1/2 cups, french cut green beans, cooked or use canned, drained
1 c cherry tomatoes, cut in halves or regular tomato wedges
1 cup thinly sliced carrots
1 cup thinly sliced zucchini
1/2 cup slivered green bell pepper
1 12 ounce can tuna packed in water, drained and broken into chunks
vinaigrette
1/2 c red wine vinegar
1/4 c canola oil
2 tbl chopped parsley
1 tsp sugar or scant tsp of splenda
1 tsp dried rosemary, crushed
1 clove of garlic, crushed
salt and pepper to taste
Directions:
1. In a large nonmettalic bowl, stir together all salad ingredients
2. Place vinaigrette ingredients in a shaker and shake well or whisk together well.
3. Pour over salad and toss to coat
4. Cover and chill 2 to 24 hours before serving
5. Drain in colander, transfer to serving bowl
6. Makes 4 to 5 servings
