Tuna and Rice Supper Pie

Great make ahead dish for a hot summer dinner!
Ingredients:
1 cup cooked rice
3 eggs
1 cup grated cheese
1 (7 ounce) can tuna, drained
1 cup milk, scalded
1/8 teaspoon salt
1/8 teaspoon pepper
1/4 cup chopped chives
1 tomato, sliced
Directions:
1. Beat 1 egg and combine with rice. Using back of spoon, press rice mixture to bottom of 9 inch pie plate. Spread 1/2 of cheese and then 1/2 of Tuna over rice. Repeat layers.
2. Combine 2 eggs, milk, salt, pepper and chives. Pour over Tuna. Bake in preheated oven at 400 F for 20 minutes.
3. Arrange slices of tomato over pie and bake for 5 minutes.
