A great way to get a complete meal on these hot days when you don't feel like cooking or eating hot foods.
Ingredients:
2 (6 ounce) cans tuna
1/3 cup shredded carrot
1/4 cup chopped cucumber
1/4 cup sliced radish
1 tablespoon pickle relish
2 tablespoons chopped green onions
3 cups cooked pasta
1/2 cup plain low-fat yogurt
1/2 cup reduced-calorie mayonnaise
1 teaspoon lemon pepper
1 teaspoon lemon juice
Directions:
1. Combine all salad ingredients except pasta, toss. Add pasta, toss again. Combine dressing ingredients, pour over salad, toss gently to mix. Cover and refrigerate several hours.
