Tuna and Mixed Bean Wraps

A quick and simple alternative to chicken fajitas, this recipe is packed full of beans and tuna for a healthy lunch time treat. For a casual evening, pile the tuna filling onto a plate and surround with tortilla chips (in place of the flour tortillas) and use the mix as a dip and scoop.
Ingredients:
4 ounces tuna in brine, drained
2 tablespoons olive oil
4 scallions, thinly sliced
1 red chili pepper, deseeded and chopped
1 garlic clove, crushed
1 (14 ounce) can mixed beans, drained and rinsed
4 tablespoons cream cheese
2 flour tortillas
Directions:
1. Heat the oil in a large frying pan, add the scallions, chili and garlic.
2. Cook over a low to medium heat for 3 – 4 minutes.
3. Add the mixed beans and cook over the heat for 2 – 3 minutes or until piping hot.
4. Stir in the tuna and cream cheese and stir gently until piping not.
5. Season to taste with salt and freshly ground black pepper.
6. Warm the tortillas in a frying pan, then fill and roll with the tuna and bean mixture.
7. Serve with salad leaf garnish.
