This tuna salad gets a nutritional A . Tastes very fresh. It is from Bon Appetit, 1999, only I added three more ounces of tuna.
Ingredients:
9 ounces albacore tuna
1/4 cup nonfat yogurt
3 tablespoon low-fat mayonnaise
1 teaspoon mustard
2 tablespoons lemon juice
1 teaspoon lemon peel
1 cup chopped onion
1 cup chopped celery
1 cup cherry tomatoes
1/2 cup chopped parsley
15 ounces garbanzo beans
Directions:
1. Mix yogurt, mayonnaise, mustard and lemon peel.
2. Put tuna in a large bowl and drizzle lemon juice over it.
3. Add yogurt dressing, vegetables and beans to tuna. Mix well. Refrigerate.
