Best if made a day ahead, this pasta salad makes a great light but satisfying lunch or light meal. I use tomato-basil seasoned feta, but you can use plain feta and add 2 to 3 tsp. minced sun-dried tomato and 1 tsp dried basil.
Ingredients:
1 12 to 16 oz. package macaroni or other small shaped pasta
2 6 oz cans tuna, preferably packed in water
3 scallions, chopped
1 cup chopped, seeded cucumber (i use english and leave the skin on for color)
2/3 cup chopped red bell pepper
1 cup mayonnaise, give or take
1 tbsp olive oil
1 t. dried marjoram
1 clove garlic, grated
5 oz. crumbled tomato and basil flavored feta cheese
1 tbsp chopped fresh basil
salt & pepper to taste
Directions:
1. Cook pasta to al dente as per package directions; drain and rinse under cold water.
2. In a large bowl, combine cooked pasta, tuna, scallions, cucumbers and red bell pepper.
3. In separate bowl, whisk together mayonnaise, olive oil, marjoram and garlic. Stir into pasta mixture, adding more mayonnaise if desired. Stir in feta and fresh basil. Season with salt & pepper.
