Since I was a Fire Chief in Tucson, I made this recipe for my wife and girls. It was always well liked at Fire Dept. functions. This is NOT a hot and spicy salsa. Now that I am retired, my girls still request it for their parties. Enjoy!
Ingredients:
2 (15 1/2 ounce) cans tomatoes, diced- do not drain
1 (10 1/2 ounce) can rotel, mild
1 (5 ounce) can green chilies, chopped
1 large sweet onion, chopped
3 tomatillos, chopped
2 fresh tomatoes, large, chopped (if in season)
3 garlic cloves, chopped
1/2 cup cilantro, chopped
1 lime, juice of
1/2 teaspoon salt
Directions:
1. Place 3 Tomatillos, 3 cloves of garlic and whole sweet onion in small baking dish. Drizzle Olive Oil, lightly, over above ingredients. Roast 30 minutes at 375 degrees to bring out sweetness. Let cool. Chop and set aside.
2. Place remaining ingredients into a large bowl. Add above ingredients and stir well. Allow flavors to blend overnight. (At least 2 hours). Serve with your favorite chips or dish.
