I was searching for a roasted garlic recipe and all that I found had a base with mayo, and since I'm not fond of mayo I thought I would come up a version of my own. So if you love the taste of Roasted garlic and the flavor of creamy yogurt, you will love this spread. It is easy to make but you have to plan ahead with roasting the garlic, caramelizing the onions and draining the yogurt, but once all the prep is done the spread is well worth it the work. (please note that this recipe was modified and the sour cream removed producing a lighter recipe.)
Ingredients:
3 heads garlic, roasted
1 whole onion, caramelized
1 (32 ounce) container low-fat plain yogurt, drained
1 pinch salt and pepper, to taste
Directions:
1. Take container of yogurt and place in a cheese cloth lined strainer, set strainer in a bowl to catch the liquid and let sit in the refrigerator until most of the liquid is drained from it (ready in a couple hours) when completely drained the yogurt will have the consistency of cream cheese.
2. Place roasted garlic and caramelized onions in food processor and process until it turns into a paste, add all but 1/2 cup of the yogurt cream cheese, process for a few seconds and add salt and pepper to taste. Can be spread on bagel or pretzel chips or used as a dip for veggies.
