Tropical Shrimp W/ Ginger Mango Relish

Ingredients:
4 teaspoons extra virgin olive oil, divided
1/4 cup chopped fresh parsley
2 teaspoons minced garlic
1/4 teaspoon salt
1/4 teaspoon ground pepper
1 1/4 lbs large shrimp, peeled, deveined, and patted dry
1 large ripe mango, peeled and diced
1/4 cup minced red onion
4 tablespoons crystallized ginger, slivered
1 lime, zest of
1 tablespoon lime juice
lime wedge (optional)
Directions:
1. In a large shallow bowl, combine 2 teaspoons oil, parsley, garlic, salt, and pepper.
2. Add shrimp and toss to combine, then steam in a Zip N Steam bag for 8 to 10 minutes or until shrimp are cooked.
3. Meanwhile, in a medium bowl, combine mango, red onion, ginger, lime zest, lime juice, and remaining 2 teaspoons oil and toss to coat.
4. Plate shrimp mixture after it is done cooking a serve with a portion o the relish on top.
