Tropical Curried Egg Salad Wraps

A few years back I concocted this recipe for a party and wrapped the salad in lettuce lined sun dried tomato flat bread and then cut it into pinwheels sections. Use the salad for a filling for sandwiches or by itself, appetizers etc. Read more . And if you wish to leave out things like certain seeds, that's fine too
Ingredients:
1 dozen eggs, hard boiled
2 stalks celery fine diced
3 tbs. sweet red or white onion fine diced
3 dried pineapple rings fine chopped
3 pieces dried mango or papaya fine diced
1/2 cup dark raisins
1/2 cup cashews coarse chopped
1/4 cup raw green pumpkin seeds
1/4 cup roasted sunflower seeds
mayonnaise to bind
dashes of hot sauce to taste
curry powder to taste
salt and pepper to taste
Directions:
1. Mix all together and chill well.
2. Use in sandwich wrap fillings, scooped in lettuce cups , fill hollowed out ripe tomatoes.
3. The taste and textures are pleasing.
4. Chopped red apples are also a nice addition as well as chopped fresh herbs such as cilantro or parsley to taste.
