A lovely medley of fruits and nuts makes this salad a hard-working antioxidant-rich medley of delightful flavors and textures. Jane Kinderlehrer.
Ingredients:
2 cups cooked chicken, cut in bite-size pieces
1 cup diced celery
20 ounce pineapple chunks, drained, juice reserved
2 oranges, peeled and sectioned
1/2 cup pecans, chopped and lightly roasted
1 cup grapes, seedless whole
4 tablespoons reduced-calorie mayonnaise
1 romaine lettuce leaves
Directions:
1. Combine chicken, celery, pineapple chunks, oranges, pecans, grapes, and dressing in a glass serving bowl. Combine the mayonnaise with 4 tablespoons of the reserved pineapple juice.
2. Serve on Romaine lettuce leaves.
