Shoot it's lime in the coconut or rum up, and merrily we roll along with boozy cloud nine, and it's all in a banana tropical fritter!
Ingredients:

100 g/4 oz/1 cup desiccated (shredded) coconut
2 bananas, mashed
75 g/3 oz dark brown sugar
finely grated rind of 1 lime
30 ml/2 tbsp dark rum
1.5 ml baking powder
oil, for deep-frying
fluffy boozy cream topping
1 egg white
300 ml double (heavy) cream
15 ml/1 tbsp brandy, rum or sherry
25 g/1 oz/2 tbsp light brown sugar
Directions:
1. Tropical Banana Fritters
2. Reserve 25 g/1 oz of the coconut and put the remainder in a bowl with the mashed bananas, sugar, lime rind, rum and baking powder.
3. Mix thoroughly. Shape into small balls and roll in the remaining coconut.
4. Deep-fry in hot oil for about 3 minutes until golden brown.
5. Drain on kitchen paper (paper towels) and serve hot with Fluffy Boozy Cream Topping.

7. Whisk the egg white until stiff.
8. Whip the cream with the brandy, rum or sherry and sugar until thick but not stiff.
9. Fold the egg white into the cream mixture. Pour into a small jug and serve.
