Triple Ginger Honey Cookies

Delicious ginger cookies with honey instead of sugar.
Ingredients:
2 cups flour (i use white spelt flour)
1 teaspoon baking soda
1 teaspoon star anise (ground)
1 tablespoon ground ginger
1/2 teaspoon salt
1/4 cup coconut oil (or butter)
1/4 cup applesauce
1/4 cup molasses (unsulphured!)
1/3 cup honey
2 tablespoons fresh ginger (ground in your food processor)
1 cup crystallized ginger (ground in your food processor)
1 egg
Directions:
1. Gently heat the honey, molasses and coconut butter together. Mixture should be warm, but not too hot to touch. Remove from heat, whisk in the egg, and then gently combine the rest of the ingredients.
2. If you plan to make shaped cookies using a cookie cutter, chill the dough in the fridge until cool before cutting.
3. For drop cookies, space out on greased cookie sheet, and then bake for 12 - 15 minutes (more time if you want them hard, less time for softer cookies).
