Ingredients:
3 cups chopped, seeded, cored tomatoes
2 cups chopped habanero peppers
2 cups chopped onions
6cloves garlic
3 tablespoons minced cilantro
2 teaspoons oregano
2 teaspoons sea salt
1/2-teaspoon cumin
1 to 1 1/4 cups cider vinegar
Directions:
1. Combine ingredients in a large saucepan.
2. Bring mixture to a boil and simmer 10 minutes.
3. Ladle hot into pint jars, leaving 1/2-inch headspace.
4. Adjust lids and process in a boiling water canner:
5. 15 minutes at 0-1,000 feet altitude
6. 20 minutes at 1,001-6,000 feet
7. 25 minutes above 6,000 feet.
