I love sweet potatoes and I love pineapple. This recipe has both and with the addition of the red hots and the marshmallows in my opinion it gets no better. Enjoy
Ingredients:
cinnamon sweet potatoes
29 ounce can sweet potatoes
8 ounce can crushed pineapple
2 tablespoons brown sugar
1/2 cup hot cinnamon candies
1/2 teaspoon ground cinnamon
1/4 cup reserved pineapple juice
3/4 cup miniature marshmallows
Directions:
1. Drain pineapple and reserve juice.
2. Place potatoes in a 1-1/2 quart casserole dish.
3. Mash potatoes with a potato masher.
4. Add drained pineapple, brown sugar, ground cinnamon and hot cinnamon candies.
5. Add pineapple juice then mix well to blend all ingredients.
6. Let potatoes sit at room temperature for 1 hour to allow cinnamon candies to partially melt.
7. Bake 30 minutes at 350.
8. Remove from oven then spread marshmallows on top and bake 5 minutes.
