Trial and Error Baked Onion Rings

fiddled with a couple recipes, this is what i've come up with. tell me how you improved it. could also be used to make onion petals if you don't want to fiddle with rings
Ingredients:
1 large white onion
1 cup flour
1 cup water
3 tablespoons cornmeal
1 teaspoon salt
3 teaspoons margarine
1/2 teaspoon powdered chipotle pepper
1/2 teaspoon black pepper
2 teaspoons garlic powder
Directions:
1. slice onion into 1/2 inch rings or petals of desired size.
2. mix rest of ingredients other then margarine.
3. dip onion bits, let excess drip off, and flash fry in margarine on med just until coating looks dry. work in batches. you can use less margarine if you're using a non-stick pan but it helps it cook up the sides a little.
4. lay in a single layer in a lightly oiled cookie sheet, spray with a little olive oil or cooking spray and sprinkle with salt as desired.
5. bake at 375f for 25 min or until crispy, turn once if bottoms getting too brown.
6. serve at once with ketchup or creamy parmesan dip.
