Tri Color Capsicum Pulav

A colorful pulav. Quick lunch recipie
Ingredients:
1/2 cup red capsicum (finely chopped)
1/2 cup yellow capsicum (finely chopped)
1/2 cup green capsicum (finely chopped)
1/2 onion (finely chopped)
1 teaspoon cumin seed
2 tablespoons oil
1/2 cup basmati rice (soaked for 1 hr and drained)
salt
2 teaspoons black pepper
2 tablespoons cottage cheese (paneer grated, for garnish)
2 tablespoons coriander (chopped, for garnish)
Directions:
1. steam the rice with 1 cup of water and keep aside.
2. in a pan, add oil and cumin seeds
3. once it crackles, add the onions.
4. when onions turn brown add all the capsicums.
5. fry for a few minutes (5 to 6) for the capsicum to get cooked.
6. add salt and pepper
7. add the steamed rice spoon by spoon,
8. mix well.
9. remove from gas.
10. add coriander and paneer.
11. serve hot with raitha.
