Low-fat, low-sugar, but oh-so-fine! Who needs another excuse to eat breakfast?? Freezing then thawing the bananas brings more moisture to the bread than just straight-mashed.
Ingredients:
1 tbsp cornstarch
1/3 cup hot water
1 1/4 cups whole-wheat flour
1/4 cup quick cooking oatmeal
2 tsp baking powder
1/2 cup splenda granular or sugar
1 tbsp honey (a dark one if you can get it!)
4 large frozen, ripe bananas, thawed and mashed
1/2 cup unsweetened applesauce
1/2 tbsp grated orange peel (optional)
1/2 tbsp vanilla extract
1/2 tbsp cinnamon
1/4 tsp salt
Directions:
1. Preheat oven to 350 degrees, grease a loaf pan.
2. Whisk together the cornstarch and water, set aside.
3. In a large bowl, combine all the dry ingredients.
4. In a separate bowl, mix together the honey, mashed bananas, applesauce, orange peel, vanilla and cornstarch slurry.
5. Add to the dry ingredients, stir until just blended.
6. Bake for 50 minutes, or until a knife inserted in the middle comes out clean.
7. Cool in pan 10 minutes before turning out to cool completely.
