These are a delicious lunchtime treat for both kids and adults! The treasure comes when you bite in, and find the melted gooey cheese centre! My son is just learning how to cook, and this is a simple recipe he is able to make pretty much on his own! You can use beef or pork if you prefer. you can make these ahead if you like..just cover them with cling wrap, pop them in the fridge, then cook them as you need them. Serve them with sweet chilli, plum, or tomato sauce. From the January 2009 issue of recipes + magazine.
Ingredients:
300 g ground chicken
1/4 cup flat leaf parsley, chopped
2 eggs
1/4 cup plain flour
125 g mozzarella cheese, cut into 16 pieces
4 sheets puff pastry, thawed
Directions:
1. Preheat oven to 220°C Line a large baking tray with baking paper. Combine chicken, parsley, 1 egg, and flour in a large bowl; season with salt and pepper. Divide the chicken mixture into 16 portions. Shape each portion of mince around a piece of cheese. Roll to enclose cheese.
2. Cut pastry sheets into quarters (squares). Place 1 portion of mince on centre of each square, gather pastry over chicken to form a bag. Beat remaining egg; brush over pastry.
3. Place bags on prepared tray. Bake for 15-20 minutes or until golden brown and cooked.
