This is a very healthy Cookie recipe. If desired, substitute 2 1/2 cups of prepared trail mix containing fruit, nuts, and coconut for the dried fruits, coconut, and chopped nuts called for in this recipe. Be sure to break up any banana chips and whole nuts, and snip any other large pieces of dried fruit into bits.
Ingredients:
3/4 cup butter or 3/4 cup margarine, softened
1/2 cup granulated sugar
1/2 cup packed brown sugar
1 teaspoon baking powder
1/2 teaspoon baking soda
1 teaspoon ground allspice
2 eggs
1 cup mashed banana (3 medium)
1 teaspoon vanilla
1 1/2 cups all-purpose flour
1 1/2 cups rolled oats
1 cup mixed dried fruit
3/4 cup coconut
3/4 cup chopped peanuts, walnuts or 3/4 cup pecans
Directions:
1. In a large mixing bowl, beat the butter or margarine with an electric mixer on medium to high speed for 30 seconds. Add the granulated sugar, brown sugar, baking powder, baking soda, and allspice; beat till combined.
2. Beat in the eggs, mashed bananas, and vanilla. Beat in as much of the flour as you can with the mixer.
3. Stir in any remaining flour with a wooden spoon.
4. Stir in the oats, dried fruit bits, coconut, and nuts.
5. Drop dough by rounded tablespoons 2-inches apart onto ungreased cookie sheets. Bake in a preheated 375F oven for 10-12 minutes, or till golden brown. Remove cookies and cool on wire racks.
