Traditional Spiced Pumpkin Pie

I've never found another pumpkin pie as perfectly spiced as my mother's. And I bet you think that about YOUR mother's pumpkin pie, too! Pumpkin pie is part of the flavor of Thanksgiving. It is one of my favorite holidays. Read more ....right after Christmas!
Ingredients:
3 eggs, beaten
1 cup sugar
1 teaspoon salt
1/2 teaspoon cinnamon
1/2 teaspoon ginger
1/2 teaspoon nutmeg
1/4 teaspoon cloves, ground
2 cups pumpkin
2 cups milk, scalded
1 pie crust (9 inch)
Directions:
1. Combine eggs, sugar, salt and spices - gradually stir in milk and then pumpkin. Turn into pie shell. Bake at 450 for 10 minutes and then reduce heat to 350 and bake for another 30-35 minutes until knife inserted in center comes out clean. Cool on rack.
2. NOTE: I use a 10 pie pan (so did Mum) so if you use 10 , too, halve again the ingredients. i.e. 3 c. pumpkin instead of 2 c., 3/4 t. cinnamon instead of 1/2 t., etc.
