Trader Vics Chili Cheese Balls

These satisfy so many cravings! Crunchy, smoothy melty cheese, the kick of jalapeno, shrimp....all rolled into one tasty little deep-fried appetizer nugget. I'm not big on cocktail parties, but these would be perfect for one. Read more . We just do them for football games in front of the tv with friends. Enjoy! From the famous Trader Vic's.
Ingredients:
1/2 pound cheddar cheese, shredded
6 ounces shrimp, uncooked, peeled, deveined and finely chopped
1 1/2 tablespoons fresh cilantro, chopped
1 tablespoon jalapeno chile peppers, canned, seed and chop - i use fresh
pinch chili powder
vegetable oil, for deep-frying
1 cup flour
1/2 cup cornstarch
3/4 teaspoon baking powder
pinch salt
1 cup water
2 tablespoons vegetable oil
panko
Directions:
1. Mix cheese, shrimp, cilantro, chilies and chili powder in bowl. Roll into 3/4 balls.
2. Heat oil in deep fryer or heavy large saucepan to 350. Combine flour, cornstarch, baking powder and salt in large bowl. Make well in center. Add water and 2 T. oil to well. Gradually whisk liquid into flour until smooth batter forms. Dip cheese balls into batter, allowing excess to drip back into bowl. Roll in panko, coating completely. Add to oil in batches and deep fry until golden brown. Drain on paper towels and serve immediately.
