This is a slaw like you have never tasted. Not drippy or mayonnaisey but crunchy and fresh, with a surprising sweetness from the raisins. My nephew turned me on to this one...
Ingredients:
3/4 cup golden raisins
1/4 cup red wine vinegar
3 tbs whole-grain mustard
1 tbs sugar
1/4 cup grapeseed oil (or sunflower)
2 tbs walnut oil
salt, freshly ground black pepper
1/2 medium head of green cabbage, shredded (about 8 cups)
1 large carrot, peeled and shredded
1/2 small red onion, thinly sliced crosswise
1/4 cup snipped chives or sliced green onion
Directions:
1. In small bowl, soak raisins in hot water for 10 minutes; drain well.
2. Meanwhile, in a large bowl, whisk the vinegar with the mustard and sugar.
3. Whisk in the oils and S&P.
4. Add cabbage, carrot, onion, chives and raisins and toss well.
5. Adjust S&P after tasting and toss again.
6. Chill well before serving.
