Quick, low fat, low calorie lunch salad.
Ingredients:
1 can 5 oz chunk light tuna, drained
1 tbsp (+/-) balsamic vinegar
1 tsp fresh lemon juice
1 tsp lemon zest
1 tbsp capers
salt & pepper to taste
1 cup lettuce, shredded into smaller pieces
1/2 medium tomato, cut in half and sliced
1/2 medium cucumber, peeled and sliced and re-sliced into halve
Directions:
1. Mix tuna and next five ingredients.
2. Spoon tuna salad over lettuce, tomato and cucumbers.
3. Lightly toss all ingredients and serve.
