1. lb. navy beans 2. /2 lb. salt pork, cubed fine 3. md. onion diced 4. -3 cloves garlic, minced 5. T. olive oil 6. /2 md. head of cabbage, shredded 7. /2 c. frozen peas 8. bay leaves 9. T. fresh parsley 10. -2 t. pepper 11. oz can tomato paste 12. /2 T. oregano or 3 T fresh 13. c. water 14. Soak beans overnight in water and drain. bring water to boil add beans and cubed port,. Simmer. In small skillet saute garlic, onion in olive oil until golden. Add to cooked beans along with rest of ingred. Simmer until veggies are soft (35 min). Blend part of soup to puree and make creamy. Serve with parmesan cheese and bread. |
