When I was young, I loved to stay overnight with my great-grandmother because she cooked my favorite recipe. We used to wake up very early in the morning to the smell of her Tortitas de Maiz. They are like polenta but sweeter. You can serve them with syrup or sprinkle with powdered sugar, but I like them plain. -CL Reader
Ingredients:
1 cup water
1 cup 2% reduced-fat milk
1/2 cup sugar
2 tablespoons butter
1/4 teaspoon salt
1 1/2 cups yellow cornmeal
1 tablespoon vanilla extract
3 large eggs, lightly beaten
cooking spray
Directions:
1. Combine first 5 ingredients in a medium saucepan; bring to a boil. Gradually add cornmeal, stirring constantly with a whisk. Remove from heat; cool 10 minutes. Add vanilla and eggs, stirring well with a whisk.
2. Heat a nonstick skillet coated with cooking spray over medium-high heat. Spoon about 1/3 cup batter into pan. Cook 2 1/2 minutes on each side or until golden brown. Repeat procedure with remaining batter.
