Tortilla Soup With Chipotle

Ingredients:
chicken stock
chicken breasts 2 pieces
chicken drumsticks 5 pieces
water 6-8 cups
onion 1/2 onion diced
garlic 2-3 cloves minced
celery 1 stalk minced
carrot 1 minced
bay leaves 2
salt 1 teaspoon
pepper 1 teaspoon
tortilla soup ingredients
tomatoes crushed 1/2 cup
olive oil 1 tablespoon
garlic cloves 1 minced
onion 1/2 diced
chipotle peppers in adobo sauce 1 (rinse adobo off)
serrano chile 1/2 minced
1/2 tsp chile powder
1/2 tsp cumin
garnish
tortilla chips or tostadas
cilantro
avocado
sour cream or crema fresca
4 -cheese mix or queso fresco
lemon juice (to taste)
Directions:
1. Make chicken stock first. The richness of this soup comes from cooking the chicken drumsticks until the stock is nice and dark approximately 30min- 1 hour. You cook the stock with all the ingredients until it boils and then bring it down to a simmer for an additional 30 minutes. And half way through this cooking time add the chicken breast. Adjust seasoning if more salt or pepper is needed.

3. Next step is to saute the tortilla soup ingredients for about 10 minutes. First add oil to pan and saute with garlic, onion, pepper, chile, tomatoes and chile and cumin powder. Second blend your saute until smooth. Now combine about 4-5 cups of your chicken broth into the pan with your saute ingredients. I usually add a veggie mix of corn, carrots and peas. Cook for an additional 20-30 minutes. To garnish add diced chicken breasts, Tortilla Chips or tostadas,Cilantro, Avocado, Sour cream or Crema Fresca, 4 -cheese mix or Queso fresco,Lemon juice (to taste)
