Tortilla Soup

this soup can be served as an appetizer or light meal,very easy to prepare.
Ingredients:
tortilla chips
1 small onion, finely chopped
2 garlic cloves, crushed
14 ounces plum tomatoes, drained and chopped
4 cups chicken stock
1 bunch cilantro, chopped
salt and pepper, to taste
Directions:
1. heat 1 tbsp vegetable oil in a large sauce pan,cook onion and garlic over medium heat for 2-3 min or until onion is soft and translucent,do not let the garlic burn,stir constantly.
2. add tomatoes to onion mixture,pour in the chick stock and stir well,bring to a boil and lower the heat,let simmer for 10 min,until the liquid has reduced slightly.
3. add cilantro to the soup,reserve a little for garnishing,season to taste.
4. place a few tortilla chips in the bowl,ladle the soup on top.sprinkle with reserved cilantro and serve.
