Tortellini Spinach And Sesame Salad

Another questionable picture, but a great recipe! Most of the cook time is chill time in the fridge. A version of this recipe was given to me, but I don't know where it came from - and I've changed it so much it likely matters not anyway. Read more . Great light, cold salad with an Asian flair. I think this would be delicious with chicken or shrimp added in as well.
Ingredients:
1 lb frozen cheese tortellini
1/3 cup slivered red onion
1 package button or bella mushrooms, thickly sliced
1 tspn butter
1 tspn sesame
1 tblspn toasted sesame seeds
1/4-1/3 cup asian style salad dressing (i used kraft lite asian toasted sesame dressing, but i've also heard that newman's own is great)
4 cups fresh spinach, washed, dried and torn into small pieces
salt & pepper
*optional - squeeze of fresh lime juice
*optional (from the original - 1 bell pepper, sliced & 1 tomato, diced - i didn't have these, so i left them out.)
Directions:
1. Cook tortellini according to package directions.
2. Meanwhile, heat butter and sesame oil in small skillet and saute the mushrooms.
3. Drain pasta, rinse quickly with cold water and transfer to large bowl.
4. Stir in the onion (and pepper & tomato, if using), the mushrooms and the salad dressing and toss to coat well.
5. Add 1/2 the spinach and stir into pasta mixture to wilt slightly.
6. Put salad in the fridge and chill for 30 minutes.
7. After salad has chilled, add the toasted sesame seeds and the remaining spinach and toss to combine.
8. Taste and season as needed with salt & pepper and maybe a squeeze of lime juice.
