This a great refreshing salad that is perfect this time of year. Nice to make after a Sunday morning trip to the Farmers Market. The key is to let it marinate to really blend the flavors.
Ingredients:
4 large fresh tomatoes sliced
2 medium videlia onions sliced(or other sweet onion)
1/4 cup olive oil
2 tablespoons red wine vinegar
2 tbls. minced fresh parsley
1 teaspoon salt
1 teaspoon italian seasoning
1 teaspoon finley chopped onion
1/2 teaspoon sugar
1/4 teaspoon garlic powder
1/4 teaspoon pepper
Directions:
1. Layer the Tomatoes and onions in a shallow serving dish( I use a glass pie pan) 2. Combine all other ingredients in a jar with a lid 3. Shake well and pour over tomatoes and onion slices 4. Cover and refrigerate for atleast 2 hours before serving 5. I sometimes throw in some chopped fresh herbs depending on what I have growing on the patio
